Family Favourite Chocolate No-Bake Cookies | Recipe
For something a bit different, today I’m sharing with you my family’s favourite chocolate cookie recipe. These are super quick and easy to whip up!
My mom used to make these for my brother and I all the time growing up, and I now make these for my family. The recipe is adapted from a 1988 church cookbook called Let’s Break Bread Together, which contains recipes from across Canada. The cookbook has seen better days and is falling apart, but the recipes inside are amazing!
Chocolate Macaroons
1/2 cup margarine or butter
2 cups white sugar
1/2 cup milk
Melt butter in large saucepan. Add milk and sugar. Bring to a bubbly boil. Remove from heat.
3 cups quick-cooking oatmeal
1 cup feather-strip or angel-flake coconut
6 tbsp. cocoa
1 tsp. vanilla
Pinch of salt
Mix into hot butter mixture thoroughly with a wooden spoon. Drop with spoon onto a waxed paper lined baking sheet. Let sit until hardened.
I would recommend having all the dry ingredients in the second part of the recipe mixed together ahead of time, as you don’t have a lot of time to mix it into the butter mixture before it cools down and becomes really difficult to mix.
